Egypt's molokhia is finely chopped into a green velvet soup, finished with a sizzling garlic-coriander tasha.

Minced leaf, rabbit or chicken broth, and the famous crackling garlic “tasha” poured in at the end.
Ingredients
- 500 gmolokhia leaves, minced (fresh or frozen)
- 1½ Lchicken broth
- 8 clovesgarlic, crushed
- 2 tbspground coriander
- 3 tbspghee
- 1 tspsalt
Method

Bring the broth to a boil and stir in the minced molokhia; do not overboil or it sinks.

Simmer gently 10 minutes, uncovered.

Fry the garlic and coriander in ghee until golden and fragrant — the tasha.

Pour the sizzling tasha over the pot; it should audibly gasp (the “shahqa”).

Serve over rice or with bread, with chicken and lime wedges.
