Thin, blistered, heavy on wild-thyme zaatar; the cheese version uses akkawi.
Ingredients
- 500 gflour
- 7 ginstant yeast
- 300 mlwarm water
- 6 tbspzaatar blend
- 100 mlolive oil
- 200 gakkawi cheese (optional)
Method

Knead a soft dough and let it double.

Mix zaatar with olive oil into a loose paste.

Flatten rounds, dimple with fingertips, and spread the topping.

Bake on a hot stone or tray at 250°C until the edges blister.
