Egypt's ta'ameya is the original: bright green inside from fava beans and a garden of herbs.

What makes it special

Made from split fava beans (not chickpeas), packed with dill, coriander, and leek, and coated in sesame seeds.

Ingredients

  • 300 gsplit dried fava beans, soaked overnight
  • 1 bunchfresh coriander
  • 1 bunchdill
  • 1 small leek or 4 green onions
  • 4 clovesgarlic
  • 1 tspground coriander
  • 1 tspground cumin
  • 3 tbspsesame seeds
  • to tasteoil for deep frying

Method

    Grind the soaked (uncooked) fava beans with the herbs, leek, and garlic into a fluffy green paste.

    Season with spices and salt, and rest the mixture 30 minutes.

    Add a pinch of baking soda, shape into patties, and press sesame seeds onto each.

    Fry in hot oil until deep brown and crisp, about 3 minutes per batch.

    Stuff into baladi bread with tahini, tomatoes, and pickles.
