✨ What makes it special
Made from split fava beans (not chickpeas), packed with dill, coriander, and leek, and coated in sesame seeds.
Ingredients
- 300 gsplit dried fava beans, soaked overnight
- 1 bunchfresh coriander
- 1 bunchdill
- 1 small leek or 4 green onions
- 4 clovesgarlic
- 1 tspground coriander
- 1 tspground cumin
- 3 tbspsesame seeds
- to tasteoil for deep frying
Method

Grind the soaked (uncooked) fava beans with the herbs, leek, and garlic into a fluffy green paste.

Season with spices and salt, and rest the mixture 30 minutes.

Add a pinch of baking soda, shape into patties, and press sesame seeds onto each.

Fry in hot oil until deep brown and crisp, about 3 minutes per batch.

Stuff into baladi bread with tahini, tomatoes, and pickles.
