A thick, herb-green dip — dill, coriander, parsley, and mint blended in — always topped with fried onions.

Ingredients

  • 300 gsplit dried fava beans, soaked
  • 1 bunchfresh coriander
  • ½ bunchdill
  • ½ bunchparsley
  • 4 clovesgarlic
  • 1 tspground cumin
  • 2 onions, sliced and fried crisp
  • 4 tbspolive oil

Method

    Simmer the soaked fava beans with the garlic until completely collapsed, about 40 minutes.

    Blend the beans with the fresh herbs, cumin, and salt into a thick green cream.

    Pour into a dish and let it cool and set slightly.

    Top with the crispy fried onions and a pour of olive oil, and scoop with baladi bread.
