✨ What makes it special
Short thick fingers piped with a wide star tip, fried slowly so the ridges stay sharp, syruped and rolled in pistachio.
Ingredients
- 250 mlwater
- 80 gbutter
- 180 gflour
- 3 eggs
- 1 tspvanilla
- 400 mlcold syrup
- 40 gground pistachio
- to tasteoil for deep frying
Method

Boil the water and butter, dump in the flour, and beat over the heat into a smooth ball.

Cool slightly, then beat in the eggs one by one with the vanilla until glossy.

Pipe short ridged fingers into medium-hot oil, cutting with scissors.

Fry slowly to a deep even gold, then plunge into cold syrup.

Drain and dip the tips in pistachio.
