Slightly more burghul than the Lebanese, with a sweet-sour drop of pomegranate molasses in the dressing.

Ingredients

  • 3 bunchesflat-leaf parsley
  • 80 gfine burghul
  • 3 tomatoes
  • 1 small onion, minced
  • ½ bunchmint
  • 2 lemons, juiced
  • 1 tbsppomegranate molasses
  • 4 tbspolive oil

Method

    Soak the burghul briefly in cold water and squeeze dry.

    Chop parsley, mint, tomatoes, and onion finely.

    Whisk lemon, pomegranate molasses, olive oil, and salt.
