Whipped fenugreek (hulba) and sahawiq over a meat-vegetable stew, served still boiling in stone.
Ingredients
- 300 gground or leftover braised meat
- 2 potatoes, diced
- 3 tomatoes
- 2 tbspfenugreek seeds, soaked overnight
- 1 bunchcoriander and green chili (sahawiq)
- 1 tsphawaij
Method

Simmer meat, potato, and tomato with hawaij into a thick stew.

Whip the soaked fenugreek with iced water until it froths white.

Pound coriander, chili, garlic, and tomato into sahawiq.

Slide the hulba and sahawiq over the boiling stew and serve immediately with malooga bread.
