Ingredients

  • 3 red bell peppers, roasted and peeled
  • 150 gwalnuts, toasted
  • 3 tbsppomegranate molasses
  • 50 gbreadcrumbs
  • 1 tbspAleppo pepper paste or flakes
  • 1 clovegarlic
  • 1 tspground cumin
  • 4 tbspolive oil

Method

    Roast the peppers until blistered and black in patches, then peel, seed, and drain them well.

    Pulse the walnuts coarsely — muhammara wants texture, not a purée.

    Add the peppers, molasses, pepper paste, garlic, cumin, and breadcrumbs, pulsing to a thick, spreadable red paste.

    Loosen with olive oil, taste, and sharpen with more molasses or a pinch of salt.

    Rest an hour for the flavors to settle, then plate with a drizzle of oil and crushed walnuts.
