Fully vegetarian: fried eggplant stewed with chickpeas, tomato, and plenty of olive oil, served at room temperature.

Ingredients

  • 3 eggplants, cubed
  • 300 gcooked chickpeas
  • 4 ripe tomatoes, chopped
  • 2 tbsptomato paste
  • 2 onions, sliced
  • 6 clovesgarlic, whole
  • 120 mlolive oil
  • 1 tspdried mint

Method

    Fry the eggplant cubes until deeply golden; drain.

    Soften the onions and whole garlic cloves in olive oil.

    Add tomatoes, paste, chickpeas, and the eggplant; simmer gently 30 minutes.

    Finish with dried mint and let it cool in its oil.

    Serve at room temperature with bread — it deepens overnight.
