Torn brown flatbread worked into caramel-ripe bananas, crowned with qishta, Yemeni honey, dates, and a rain of nuts.
Ingredients
- 3 flatbreads (khubz or malooga), torn
- 4 very ripe bananas
- 150 gqishta or thick cream
- 100 ghoney
- 4 dates, sliced
- 40 galmonds and raisins
- 1 pinchground cardamom
Method

Toast the torn bread lightly in a dry pan until it smells nutty.

Mash the bananas coarsely and work the warm bread through them.

Warm through gently with the cardamom so it binds into a soft mash.

Spread in a bowl, spoon over the cream, honey, dates, and nuts, and eat warm.
