✨ What makes it special
Mahlab-scented semolina, three classic fillings (date, walnut, pistachio), each with its own mold shape.
Ingredients
- 700 gfine semolina
- 300 gghee
- 1 tspmahlab, ground
- 2 tbsprose and orange blossom water
- 300 gdate paste
- 200 gwalnuts or pistachios, sugar, blossom water
- to tastepowdered sugar to finish
Method

Rub the ghee into semolina and mahlab; rest overnight.

Revive the dough with blossom waters until it holds together.

Roll the fillings: date logs, sweetened nut mixtures.

Fill balls of dough, press into molds, and knock out.

Bake until barely blond — maamoul must stay pale and tender.

Dust nut-filled ones with powdered sugar once cool.
