✨ What makes it special
The “naameh” (fine) style with its signature orange hue, Nabulsi cheese, and crushed pistachio center line.
Ingredients
- 500 gfine knafeh semolina dough (naameh)
- 500 gNabulsi or akkawi cheese, desalted
- 200 gghee
- 400 gsugar
- 1 tbsporange blossom water
- 50 gpistachios, crushed
- to tasteknafeh coloring (optional)
Method

Make the syrup: sugar, water, a squeeze of lemon, and orange blossom; cool it.

Work the ghee (and coloring) into the fine dough.

Press the dough into a wide tray and blanket with sliced cheese.

Cook over medium flame, rotating, until the base turns amber and the cheese flows.

Flip onto a platter, soak with cool syrup, and stripe with pistachio.

Serve hot, ideally folded into a kaak sesame ring.
