Kabsa spice with dried lime (loomi), whole spices in the rice, and a fresh tomato-chili daqus sauce on the side.
Ingredients
- 1 whole chicken, quartered
- 500 gbasmati rice
- 3 tomatoes, grated
- 2 dried limes (loomi)
- 2 tspkabsa spice (cardamom, cinnamon, clove, black lime)
- 2 onions
- 3 tbspghee
- 50 graisins and toasted almonds
Method

Brown the chicken in ghee with onions, then add tomato, spices, and pierced loomi.

Cover with water and simmer until the chicken is nearly done.

Lift the chicken; cook the rice in the spiced broth.

Crisp the chicken under the grill while the rice rests.

Mound the rice, seat the chicken on top, scatter raisins and almonds, serve with daqus.
