Cracked wheat cooked down with chicken and laban into a savory porridge, sharpened with loomi and finished with fried onion and black lime dust.
Ingredients
- 400 gjareesh (cracked wheat), soaked
- 1 chicken, quartered
- 500 mllaban (yogurt drink) or yogurt
- 2 onions
- 2 dried limes (loomi)
- 1 tspcumin and black pepper
- 3 tbspghee
Method

Simmer the chicken with one onion and the loomi into a rich broth; lift out and shred the meat.

Cook the soaked jareesh in the broth, stirring often, until thick and tender — about an hour.

Stir in the laban and shredded chicken and beat until creamy.

Fry the second onion in ghee until deep brown and pour it, sizzling, on top with a dust of ground loomi.
