The bread is the pan: meat, onion, and pepper bake inside baladi loaves so the fat crisps the crust from within.
Ingredients
- 500 gminced beef, 20% fat
- 4 baladi bread loaves
- 1 onion, grated and squeezed
- 1 green pepper, minced
- 1 hot chili, minced (to taste)
- 1 tspcumin, coriander, and black pepper
- 2 tbspmelted ghee for brushing
Method

Knead the meat with onion, peppers, and spices — no breadcrumbs, no egg.

Split each loaf at the seam and spread the meat thin to the edges.

Brush with ghee, wrap in paper or foil if you like, and bake hot until the bread crackles.

Cut into quarters and eat burning hot with pickles.
