What makes it special

Dough stretched over the arms until translucent, folded over ghee again and again — served with honey and qishta, or eaten plain with aged mish cheese.

Ingredients

  • 500 gflour
  • 1 tspsalt
  • 300 mlwarm water
  • 200 gghee, melted
  • 2 tbspoil for resting
  • to tastehoney and qishta to serve

Method

    Knead a soft dough, divide into balls, coat in oil, and rest until fully relaxed.

    Stretch each ball on an oiled surface until translucent — thin enough to read through.

    Brush generously with ghee and fold into a square; repeat with a second sheet wrapped around the first.

    Bake at 220°C until puffed and deeply golden.

    Serve torn at the table with honey, qishta, or salty old cheese.
