What makes it special

More onion than spinach, no molasses — just sharp sumac and a flood of peppery olive oil, often shaped as open boats.

Ingredients

  • 500 gflour
  • 7 gyeast
  • 400 gspinach or wild greens, chopped
  • 3 large onions, diced
  • 3 tbspsumac
  • 120 mlbaladi olive oil
  • 1 lemon
  • 1 tspchili flakes (optional)

Method
