Twice-cooked potatoes finished in a hot pan with garlic, fresh coriander, chili flakes, and a squeeze of lemon.
Ingredients
- 1 kgpotatoes, cubed
- 6 clovesgarlic, minced
- 1 bunchfresh coriander, chopped
- 1 tspchili flakes
- 1 lemon, juiced
- 1 tspsalt
- to tasteoil for frying
Method

Fry the potato cubes in hot oil until deep gold and crisp, then drain on paper.

In a wide pan, warm a spoon of oil and soften the garlic with the chili flakes — seconds only, don't let it brown.

Tumble in the potatoes and most of the coriander, tossing until every cube is coated and fragrant.

Season with salt, hit with lemon juice off the heat, and shower with the remaining coriander.

Serve immediately while the edges still crackle.
