Deep-fried until caramelized at the edges, always served with lemony tarator and often as a wrap.
Ingredients
- 1 large cauliflower, cut into florets
- 4 tbsptahini
- 2 lemons, juiced
- 1 clovegarlic, crushed
- 1 tspsalt
- to tasteoil for deep frying
- to tastefresh mint and pickles, to serve
Method

Dry the florets well — wet cauliflower spits and steams instead of browning.

Fry in hot oil until deep gold with caramelized edges, then drain and salt while hot.

Whisk the tahini with lemon, garlic, salt, and cold water into a pourable tarator.

Pile the cauliflower on a plate and pour the tarator over, or serve it alongside for dipping.
